A Million Veggies Stew

Veggie Stew

Ingredients (serves 8)

  • 2 lbs ground turkey or chicken 
  • 1/2 – 3⁄4 cup leeks or green onions. chopped 
  • 1⁄2 cup fennel, chopped (or onion if not low FODMAP) 
  • 1 tbsp garlic, minced 
  • 1 1⁄2 cups bell peppers, sliced or diced 
  • 6-7 carrots, sliced 
  • 2 cups zucchini, chopped 
  • 2 cups eggplant, chopped 
  • 2 tbsp apple cider vinegar (or white vinegar) 
  • 2 tbsp tomato paste 
  • 2 1⁄2 tsp fennel seeds 
  • 2 tsp paprika 
  • 1 1⁄2 tsp ground cumin 
  • 1 cup vegetable stock 
  • 2 x 15oz cans of diced tomatoes 
  • 1 tsp salt 
  • 5oz box of frozen spinach 
  • 1 1⁄2 tbsp grated lemon zest 

Directions

  1. Heat a large saucepan, then add the ground turkey or chicken. Sauté 5 minutes, until meat is slightly browned. 
  2. Add the leeks and fennel and cook for another 1-2 minutes or until fragrant. Add the garlic, peppers, carrots, zucchini, and eggplant, and cook 5 more minutes. 
  3. Add everything else and cook 20 minutes over medium, stirring occasionally.
