Pumpkin Protein Pancakes

Ingredients:

1 cup egg whites

3/4 cup pumpkin puree

1 scoop Vanilla protein powder of choice 

2 tbsp ground flax

2 tbsp organic honey or maple syrup 

1/8 tsp ginger

1/4 tsp nutmeg

2/3 tsp cinnamon

1/2 tsp pumpkin spice

1/4 tsp baking soda

Instructions:

  • Mix pumpkin and egg whites very well, then add in the honey or maple syrup 
  • Mix all dry ingredients together (ie: protein powder and spices)
  • Heat pan to low-medium heat and coat with coconut oil (spray)
  • Pour batter to make 4-5 inch round pancake
  • Once there are bubbles, flip and cook the other side
  • Pancakes are done when golden brown
