

Ingredients (serves 8)
- 2 lbs ground turkey or chicken
- 1/2 – 3⁄4 cup leeks or green onions. chopped
- 1⁄2 cup fennel, chopped (or onion if not low FODMAP)
- 1 tbsp garlic, minced
- 1 1⁄2 cups bell peppers, sliced or diced
- 6-7 carrots, sliced
- 2 cups zucchini, chopped
- 2 cups eggplant, chopped
- 2 tbsp apple cider vinegar (or white vinegar)
- 2 tbsp tomato paste
- 2 1⁄2 tsp fennel seeds
- 2 tsp paprika
- 1 1⁄2 tsp ground cumin
- 1 cup vegetable stock
- 2 x 15oz cans of diced tomatoes
- 1 tsp salt
- 5oz box of frozen spinach
- 1 1⁄2 tbsp grated lemon zest
Directions
- Heat a large saucepan, then add the ground turkey or chicken. Sauté 5 minutes, until meat is slightly browned.
- Add the leeks and fennel and cook for another 1-2 minutes or until fragrant. Add the garlic, peppers, carrots, zucchini, and eggplant, and cook 5 more minutes.
- Add everything else and cook 20 minutes over medium, stirring occasionally.
