This recipe is made with simple ingredients like whole quinoa, eggs, honey and blueberries making it a healthy + tasty weekend breakfast idea. The best part is: you can make several in advance and freeze them so you can enjoy them all week!
Ingredients
2.5 cups cooked quinoa
2 tsp. Coconut, grape-seed or canola oil
1 cup almond milk
4 eggs
1 tbs. honey
1.5 cup blueberries
1 tsp. salt
3 tsp. baking powder

Directions
- In a blender, mix milk, eggs, honey, quinoa and oil together
- Once smooth add salt and baking powder then blend for a few seconds
- Preheat griddle and add 1 tsp oil or butter
- Pour ¼ cup batter on the griddle
- Sprinkle blueberries over the batter and cook
- Once there are bubbles, flip and cook the other side
- Pancakes are done when golden brown
